全球暖化的趨勢,使得氣候異常以及四季分明不再。許多政府組織早已開始著手提倡環保與節約能源的相關活動。但從近年來發現,飲食對於環境所造成的影響甚大,包含食材的選擇、運輸距離、購買份量、烹調方式以及食用完的廢棄處理,每一環節對於環境都具有影響力。經由國外所推崇的相關飲食運動與食育的政策後,國內政府也開始效仿相關行動,除了推動低碳飲食概念,也陸續在各國中以及國小推行食育課程,讓學童能從小培養正確的觀念。 低碳飲食為近年來學者研究之議題,先前學者無針對全臺的消費者做整體性調查。依時間與財力限制之考量,本研究採用有機農業全球資訊網之農糧署所提供的各地區農夫市集,經過實地查證後共有30間,並以市集的消費者做為研究之對象。依配額抽樣法發放350份問卷,回收337份有效問卷,資料分析採用IBM SPSS Statistics 21驗證其變項間之關聯。研究結果發現,低碳飲食認知對行為意圖有顯著的影響,其中又以低碳食材的影響效果較高;綠色消費態度對低碳飲食行為意圖有顯著的影響,而當中以資源回收的影響最高,但整體的綠色消費態度無法有效的正向調節低碳飲食間之關聯。
This study primarily explored the promotion of low-carbon diets and the effects of consumers’ cognition on their behavioral intentions of adopting a low-carbon diet. Not only explored the relationship between cognition and intentions of the low-carbon diet among farmers’ market consumers in Taiwan, but also studied the moderating effect of green consumption attitudes. In 2011, The Environmental Protection Administration advocated the Reference Guide of Low-carbon Diet, covering many points as followed to let consumer more understood the low-carbon diet. This study had chose consumers at farmer markets in Taiwan. Survey was conducted from March to April 2014, the total questionnaires were 350 copies, and the number of valid questionnaires was 337 copies. The results showed that cognition of the low-carbon diet had a positive influence on the behavioral intentions of the low-carbon diet. In the moderated regression analysis, although green consumption attitudes had a positive influence on the behavioral intentions of the low-carbon diet, there was no significant moderating effect of the green consumption attitudes interaction. Through this study expected that the results will contribute to the academic community.
