台灣高職餐飲管理科學生就業或升學意願之探討

摘要


隨著科技進步、產業結構改變,帶動餐飲業蓬勃發展,新的餐飲服務業相繼開張,高職、四技二專之餐飲相關科系快速擴增,因此提供學生在就業或升學上多種選擇,但這一群高職餐飲管理科三年級同學是否做好準備,能在就業或升學上作良好的選擇?因此探討高職餐飲管理科三年級學生的性別、年齡、興趣、技能、工作經驗、取得證照數、學業成績等個人因素,及探討父母職業、父母教育程度、父母管教態度、父母期望和家庭收入等家庭因素,與就業或升學的關係,以了解高職餐飲管理科培育基層餐飲從業人員之現狀,期能給予教育當局及學校在輔導、實習、教學及就業或升學上提供建議。 本研究對象為台北縣及桃園縣餐飲管理科應屆畢業生三年級同學,共有16所學校,其中僅一所為國立學校,其餘為私立學校。研究採問卷方式,以描述統計、多元回歸、多因子變異數及相關作資料分析。 研究結果顯示學生的個人因素中,性別、年齡、興趣、技能、工作經驗、取得證照數、學業成績等與高職餐飲管理科三年級學生就業或升學的意願有關。學生的家庭因素中,父母管教態度和父母期望與學生的就業或升學意願有關。就業或升學意願中以選擇就業餐飲相關行業意願最高,選擇升學到餐飲相關科系次之,選擇升學到非餐飲相關科系意願最低。

Vocational High Schools’ restaurant programs have gone through a rapid growth in the recent years. Although some studies have been done on investigating Hospitality programs’ students’ career perspectives, none has been explicitly done in examining senior students of Vocational High Schools. This thesis reports on a research project investigating senior students’ education and career perspectives and possible factors that correlate with these perspectives. The sampling frame of this research was students of 16 vocational high schools located in Taipei and Taoyuan. One thousand six hundred and thirty six questionnaires were handed out, 1408 questionnaires were returned. Of the 1408 questionnaires returned, 1340 were appropriate for analysis, resulting in a valid return rate of 81.9﹪. Statistical techniques including descriptive statistics, factor analysis, Cronbach’s alpha, Correlation analysis, MANOVA, and regression analysis were used to analyze the data and test the hypotheses. Personal factors, such as gender, age, interest, skill, work experience, number of certificates got, and grade, were found to be significantly related to senior students’ career and education perspectives. The results of this research showed that personal interest exerts the most influence on senior students’ education and career perspectives. Family factors, including parents’ attitude and parents’ expectations, were found to be significantly related to senior students’ education and career perspectives. The findings also indicate that most senior students of Vocational High School prefer to work at restaurant industry or advance their study in restaurant management related areas.
