台南素有美食之都稱譽,小吃幾可作為城市品牌以行銷觀光,然而在城市的飲食書寫面向上,卻呈現相對缺乏的現象。從1995至2015年這二十年之間,不計美食指南式的導覽書籍,關於台南飲食書寫主題的出版品只有十本,而且集中於2011年縣市合併之後。 近年台南爆發觀光熱潮,讓城市書寫成了顯學,連帶使飲食書寫的出版也豐富起來。其中王浩一的《小吃研究所》上下冊、魚夫的《移民台南》及Darkbringer的《24hrs吃在台南》不僅著墨於小吃或店家本身的介紹,更強調台南飲食體系形成的文史脈絡,以及飲食現象所引發的思考。 本文試圖由三位作者對飲食的書寫著手,透過文本解析呈現出台南在地飲食書寫的樣貌,其次分別從空間與時間兩個角度切入,討論文本所描繪出的台南飲食地景,以及台南小吃獨特的時間觀。
