Investigation on the Sanitary Status of Detergents for Vegetables, Fruits and Kitchen Utensil in Restaurants

In order to understand the sanitary status of detergents for vegetables, fruits and kitchen utensil in restaurants, 212 samples were collected from whole districts of Taiwan from October 1989 to April 1990, We examed their pH value, arsenic, heavy metals, methanol and fluorescent bleaching agents. The results showed that 2 samples contained methanol beyond 0.1%, one sample contained fluorescent bleaching agent and the PH value of 10 samples were beyond the range 6.0~8.0, so that 5.7% samples were not corresponded to the regulations.
