大台北地區民眾營養標示認知與喜好調查

Knowledge and Preference on Nutrition Labeling among Taipei Metropolitan Residents

摘要


本調查的主要目的在於瞭解消費者對衛生署已公佈之六種營養標示格式與內容的認知、理解、應用與喜好情形,及其對營養宣稱及健康宣稱的認知情形,以提供衛生署進一步訂定營養標示相關法規之參考。本次調查對象為居住大台北地區之居民共397人,利用問卷以街頭訪問方式進行。研究結果發現80%以上受訪者曾見過營養標示。在對6種營養標示格式之認知與理解方面,年齡越大越不易瞭解或應用,教育程度越低者在理解與應用上越有困難。以份量為單位且不含每人每日建議攝取量百分比的營養標示格式最受歡迎。多數受訪者無法區分絕對性與相對性營養宣稱,且有84.4%見過營養宣稱者懷疑或完全不相信營養宣稱。九成以上受訪者認為營養標示有其必要性,並認為營養標示、營養宣稱或健康宣稱會增加其購買食品的意願,但仍有44.6%的受訪者會受健康宣稱誤導。本調查結果顯示,大都會地區民眾對營養標示的認知受年齡、教育程度的影響,且其對營養標示的觀念仍待加強的情形下,政府除了訂定適當的法規外,營養教育的推行更是達到營養標示目的的重要方法之一。

The purpose of this study was to survey the nutritional knowledge and preference on the six nutrition labeling formats promulgated by the government in Taiwan among Taipei metropolitan residents. A sample of 397 food shoppers over 20 years old was recruited by a street-intercept method. More than 80 percent of interviewees had seen nutrition labeling previously. The nutritional knowledge of interviewees decreased with the age increased and education levels decreased. The degree of difficulties on applying nutrition labeling information to calculate food nutrient contents was higher for older and lower educated interviewees than for younger and higher educated interviewees. The format using serving sizes without % daily values was the most preferred. Most interviewees could not differentiate the differences between absolute and comparative nutrition claims, however, 84.8% of those who had seen nutrition claims did not believe the claim contents. Although purchasing intention would be aroused by nutrition labeling, nutrition claims or health claims, 44.6% of interviewees would be misled by health claims. Besides, the recognition of the importance of nutrition labeling among interviewees, the needs for education on reading nutrition labels require attention before government enact nutrition labeling laws.
