女子壘球運動員營養知識與飲食行為之研究

Nutritional Knowledge and Dietary Practices of Female Softball Players

摘要


本研究目的是探討女子壘球運動員的營養知識與飲食行為,以及營養知識、飲食行為、及參與營養教育與否之間的關係。本研究針對34名平均年齡20.2±1.6歲的女子壘球選手進行研究,問卷包括:營養知識與飲食行為,其中飲食行為還包含一般飲食狀況、高熱量食物進食狀況、不良進食行為、不良進食技巧等四個部分。資料藉由敘述性統計、皮式積差相關、獨立樣本t檢定處理變項之間的關係。研究結果顯示營養知識與飲食行為無顯著相關(r=0.248,p=0.158);營養知識與參與過營養課程則有顯著相關(t=2.18,p=0.037)。以13分為滿分的營養知識量表,這批運動員的知識測驗平均分數為9.4分。而飲食行為方面,均衡飲食狀況以奶類和水果類的攝取頻率最差;高熱量食物攝取頻率以含糖飲料及加工肉品最多;進食行為經常不固定吃三餐,或有時會省略某餐、吃東西一定會吃光,不會剩下或一直吃到很飽為止等不良飲食習慣;進食技巧則以高脂肪食物進食技巧最差。結論:女子壘球運動員飲食行為偏向高脂肪與高精緻糖的不均衡飲食習慣,因此建議加強女子壘球運動員之營養教育,以期改善其營養態度與飲食行為。

The purpose of this study was to investigate female softball players' nutritional knowledge and dietary practices, as well as relationships among nutritional knowledge, dietary practices, and nutritional education. Thirty-four female softball players with an average age of 20.2±1.6 years completed two questionnaires, one on nutritional knowledge and the other on dietary practices, consisting of general diet, intake of the high-calorie food, unfavorable eating behavior, and unfavorable eating skills. Data were analyzed by descriptive statistics, Pearson's product moment correlation, and t-test. A significant correlation was found between nutritional knowledge and nutrition courses t=2.18, p=0.037) while, there was no significant difference in nutritional knowledge and dietary behavior (r=0.248, p=0.158). The average test score of players’ nutritional knowledge was 9.4 of 13 points. In terms of dietary practices, milk and fruit intake showed the lowest frequency. In addition, sugary beverages and processed meat were the main sources of high-calorie foods. The current research also revealed that these female softball players had some unfavorable eating behaviors including, skipping a meal, not eating on time, overeating, and eating too much high-fat food. In conclusion, these female softball players' dietary practices tended toward highly refined sugar and a high-fat diet. Therefore, results suggest that female softball players need to be educated en nutritional knowledge to improve their nutrition attitudes and dietary practices.
