秈稻品種台中秈10號移植時期與儲存期間對產量性狀與米質的影響

摘要


本試驗旨在探討不同移植期對台中秈10號產量性狀與稻米理化特性影響及貯存期間台中秈10號米飯食味變化,結果發現第一期作台中秈10號延遲移植者可提高粗蛋白質含量,但在第二期作台中秈10號之直鏈澱粉及粗蛋白質含量則隨移植期延後而降低,凝膠展延性隨移植延後而昇高。而將台中秈10號以稻穀袋裝形式貯存時,第一期作儲存五個月後米質變劣;第二期作則經六個月儲存米質變劣。

The purpose of this study was to investigate the effect of planting time and storage on rice quality of rice cv. Taichung Sen 10 in Taichung area. It was found that the protein content of grains increased significantly in response to late planting in the first crop season. The amylose and protein content of grains decreased significantly while gel consistency increased significantly in response to late planting in the second crop season. However, the palatability of cooked rice was worse while it stored at room temperature than stored at 10℃ after harvesting for 5 months of the first crop season and for 6 months of the second crop season.
