The purpose of this study was to investigate the effect of planting time and storage on rice quality of rice cv. Taichung Sen 10 in Taichung area. It was found that the protein content of grains increased significantly in response to late planting in the first crop season. The amylose and protein content of grains decreased significantly while gel consistency increased significantly in response to late planting in the second crop season. However, the palatability of cooked rice was worse while it stored at room temperature than stored at 10℃ after harvesting for 5 months of the first crop season and for 6 months of the second crop season.
