餐飲產業中飲料的專利地圖技術分析

摘要

由於餐飲產業規模的限制，國內餐飲產業對於技術創新之投入，一直落後於歐洲、美國、日本等先進國家，甚至不及於鄰近的韓國。如今運用有限資源，進行最有利之投資，乃餐飲產業技術管理策略重要課題。從專利資料庫中將得知領先進技術的訊息，這將形成公司的核心競爭力。本篇文章將利用智慧財產權管理中重要分析工具－專利分析，並採用連穎科技所開發之專利分析軟體PatentGuider2008為分析工具，分析應用在餐飲技術領域中的核心技術。
本研究重點擬透過專利之檢索、蒐集及分析，建置餐飲產業之專利地圖，分析國內餐飲產業技術發展現況與未來發展方向；並瞭解國內產業背景條件與特性，提供餐飲產業技術發展之建議，歸納本研究達成之目的有：
1.運用專利地圖分析目前國內餐飲產業發展現況與未來的發展趨勢。
2.藉由專利地圖分析國內外競爭公司之發展趨勢及往後投資者應切入市場的角度。
透過專利地圖分析，研究中發現目前國內餐飲產業飲料專利技術以IPC分類中A47G019（235件）、A23L001（195件）及A23L002（191件）為發展最多的專利技術，美國主要發展A23L001（495件）A23L002（420件）及A47J031（624件）。本研究經專利地圖公司別分析與引證率分析後，發現餐飲產業飲料技術之關鍵技術，不管國內外皆以廚房用具；咖啡磨；香料磨；飲料製備裝置相關領域技術為主，日後欲投入餐飲產業飲料專利技術市場的投資者，可從此領域作專利迴避設計的規劃進而找出技術缺口，發展新技術創造企業之專利技術提昇企業競爭能力達到永續經營的目標。

As the catering industry, restrictions on the scale of the domestic food industry, investment in technical innovation, has been lagging behind in Europe, the United States, Japan and other advanced countries, and even less in the neighboring of the Republic of Korea. Today, the use of finite resources to conduct the most favorable investment, industrial technology management strategy is catering the important issue. From the patent database will be the message that leading edge technology, which will form the company competitiveness. This article will profit intellectual property management with an important tool for Patent analysis, and using technology developed by even the wing of the patent analysis software PatentGuider2008 analysis tools, analytic applications in food technology in the core technology. The research focus of the inspection to be through a patent claim, collect and analyze, build food industries Patent map analysis of the domestic food industry, technology development status and future development directions; and understand the background conditions and characteristics of the domestic industry, to provide catering and Industrial Technology development proposals, summarized the purpose of this study was to achieve are:
1. The use of patent map analysis of the current status of the domestic food industry and future trends.
2. By the patent map analysis of the development trend of domestic and foreign competitors and beyond, investors should enter the market perspective.
Through analysis of the patent map, the study found that the domestic food industry, beverages patented technology to IPC classification A47G019 (235), A23L001 (195), and A23L002 (191) for the development of most of the patented technology, the U.S. major development A23L001 (495) A23L002 (420), and A47J031 (624). This study by the patent map analysis and citation rate in the company of other analysis, found that food industry, beverages technology key technologies, no matter at home and abroad are mainly made kitchen utensils; coffee mill; spices grinding; beverage preparation device technology related fields, for the future food industry, beverages patented technology into the market investors can benefit from this area of the design plan for patent to avoid further identify technology gaps in the development of new technology to create companies of the patented technology to enhance the competitiveness of enterprises to achieve sustainable business goals.
