白藜蘆醇抗氧化特性之研究

Study on the Anti-oxidant Properties of Resveratrol

摘要


白藜蘆醇(trans-3,5,4'-trihydroxystilbene, Resveratrol),為一種多酚類化合物,常見於葡萄表皮、桑椹、花生及紅酒中,對植物體而言,具有抗真菌感染的作用,故白藜蘆醇也被視為一種植物的抗毒素(Phytoalexin)。根據以往研究證明,白藜蘆醇具有抗發炎、抗氧化、清除自由基、抗過敏及預防心血管疾病等作用;更有研究指出,白藜蘆醇亦為一種有效的癌症預防用藥,可用於抑制腫瘤生長。然而,白藜蘆醇與其他的抗氧化劑的交互作用,則無任何研究報告。本研究的主要目的,在於比較白藜蘆醇與維生素C、維生素E的抗氧化活性,並探討三者彼此相加後對抗氧化能力的影響。研究結果顯示,白藜蘆醇與維生素C或維生E相加後,其抗氧化能力比個別之抗氧化能力強,但未有明顯的協同作用。後續研究將進一步探討白藜蘆醇與維生素C、維生素E合併使用抗氧化的可能機轉,並將此實驗結果應用於抗氧化或抗老化保養品的研發。

Resveratrol (trans-3,5,4'-trihydroxystilbene) is a polyphenolic compound found in grapes, mulberries, peanuts and red wine. It acts as plant antitoxin (phytoalexin) and natural vegetative antibiotic. Resveratrol is reported to possess various pharmacological activities such as anti-inflammation, anti-oxidation, elimination free radical, anti-allergy, and prevention of cardiovascular diseases. It has also been shown to suppress tumor growth and may be used as preventive for cancer. However, there is no report about interaction between resveratrol and other antioxidants. The aim of this present study is to compare the anti-oxidation activity of resveratrol with that of vitamin C or vitamin E, we also determine changes of anti-oxidation activity when resveratrol and vitamin C or vitamin E were added together. In the results, resveratrol combined with vitamin C or vitamin E have shown evident effect on anti-oxidation. Further study will be performed to explore the possible mechanism of the cooperative anti-oxidation effect between resveratrol and vitamin C or vitamin E. Anti-oxidation or anti-aging cosmetic formulations containing resveratrol and vitamin C or vitamin E will also be designed and developed in the near future.
