Antioxidant activities of sweet potato vines and their corresponding in vitro effects on the oxidation of human low-density lipoprotein (LDL) were studied in this subject. The results showed that total phenol and flavonoid contents in 80% methanol extracts were greater than their respective counterparts in water extracts. The effectiveness of 1,1-diphenyl-s-picryl-hydrazyl (DPPH) scavenging activity and Fe^(2+)-chelating activities of sweet potato vines of 80% methanol extracts were higher than those of water extract. The DPPH IC_(50) values of 80% methanol extracts and water extracts were 4.91 and 11.68 mg/mL, respectively; and the Fe^(2+)-chelating activities of vines 80% methanol extract were greater than those of water extract by 3.36~3.97 folds. The 80% methanol extract at 200 μg/mL decreased 83.3% (p<0.01) thiobarbituric acid-reactive substances (TBARS) of human LDL, and extended the lag time of human LDL from 1 to 4 h at 20 μg/mL. These findings suggest that 80% methanol extract of sweet potato vines has significantly inhibitory activities against copper ion-induced LDL oxidation.
本研究主要探討甘藷藤抗氧化及其對人類血清低密度脂蛋白氧化之影響,結果顯示甘藷藤以80%甲醇萃取其抽出物之總多酚及類黃酮之含量比水抽出物高,對DPPH之清除能力與亞鐵離子螯合作用亦顯示80%甲醇萃取物比水抽出物高,DPPH 清除能力之IC 50 分別為4.91 and 11.68 mg/mL,80%甲醇萃取物對亞鐵離子蟄合作用比水抽出物高3.36-3.97倍,當80%甲醇萃取物之濃度為200μg/mL時,可降值人類血清低密度脂蛋白硫巴比妥價約83.3% (p<0.01) ,濃度為20 μ g/mL時可延緩人類低密度脂蛋白氧化遲滯時間4倍,即甘藷藤80%甲醇萃取物可有效抑制因銅離子所誘導之LDL氧化現象。
