台灣地區販售動物內臟鉛含量背景調查

The Investigation on Background Contents of Lead in Edible Offals in Taiwan District

摘要


為瞭解臺灣地區販售動物內臟鉛含量現況,於台北地區採集檢體,種類包括豬內臟(豬腦、豬心、豬肺、豬肝、豬肚、豬腸、豬腎、豬胰),雞鴨內臟(雞鴨心、雞鴨肝、雞鴨腸、雞鴨胗)及牛肚等計76件,並採集豬里肌肉檢體5件作比較,總計81件檢體。檢體以硝酸消化,茲曼石墨爐式原子吸收光譜儀檢測,以標準添加法定量。檢測結果內臟鉛含量總平均值為0.025ppm(N.D.~0.056ppm),豬里肌肉鉛含量總平約值為0.024ppm(N.D.~0.048ppm),聯合國糧農組織/世界衛生組織食品委員會提出之「可供食用之牛、羊、豬及家禽鉛含量」限量標準,規定內臟鉛最大容許量0.5mg/kg,肌肉鉛最大容許量0.1mg/kg,調查結果動物內臟、肌肉鉛含量檢驗結果約未超出此標準。

In order to understand the background values of lead in edible offals sold in Taiwan, samples from various supermarkets and traditional vendors were collected. Seventy six samples of pig offals (pig brain, heart, lung, liver, tripe, intestine, kidney and spleen), chicken and duck offals (heart, liver, intestine and kidney) and cattle tripe were collected. In addition five pork samples were analyzed. The samples were digested using concentrated nitric acid, detected by Zeeman graphite furnace atomic absorption spectrophotometer, and quantified by standard addition method curve. The results showed that the average contents of lead in offal and pork were 0.025 ppm (N.D.~0.056 ppm) and 0.024 ppm (N.D.~0.048 ppm), respectively. The lead concentrations of all samples were below the maximum limits set by the Joint FAO/WHO Food Standard Programme Codex Alimentarius Commission, which were 0.5 mg/kg in edible offals, and 0.1 mg/kg in meat of cattle, sheep, pig and poultry.
