The Effect of Liquid Fermentation Products of Agaricus blazei Murill on Antifatigue in Mice

巴西蘑菇醱酵液對小鼠抗疲勞作用之研究

隨著科技的發展和生活型態的改變,在亞洲台灣,時常可以見到因忙碌生活及壓力導致外食族的增加與容易疲勞,且因攝取之營養不均衡,導致容易有體重過重及膽固醇過高之問題。根據統計,心血管疾病乃是全球第一大死因,隨著健康意識的抬頭,除了飲食控制外,補充健康食品已經是一個用於增強身體機能及保持健康的趨勢。巴西蘑菇含有大量之β-glucan,本研究主要以巴西蘑菇BCRC36814菌株探討液態醱酵槽中液態培養之菌絲體所造成的降血脂及降低膽固醇機制,β-glucan是具高分子量混合鍵結之多醣類,可以使體內之膽固醇下降、降低血脂及延緩疲勞狀態、提高機體運動機能與快速消除疲勞等功效。巴西蘑菇醱酵液在生產上,採用液態醱酵製造,無重金屬汙染問題,安全性無虞,使用固定之控制及環境,使品質維持穩定。將巴西蘑菇醱酵液調配成高、中、低劑量濃度(100、50及20%)給予小白鼠飲用14天後,測定其不負重游泳耐力時間和血清尿素氮(BUN)及血乳酸值(Lactate)等兩項生化指標。根據實驗結果顯示,巴西磨菇經液態醱酵槽所培養生成的產物具有明顯抗疲勞作用之效果。若能將巴西蘑菇醱酵液之降低血脂與增強免疫功能、迅速恢復疲勞之優點作為參考之機能性食品,或許將有助於現代人對於健康之進一步需求。

With the development of science and technology as well as the changes of lifestyle, people are often apt to feel exhausted resulting from busier life, higher pressure, and frequent dining outs. Besides, due to increasingly unbalanced nutrition, people are more likely to have problems of overweight and high cholesterol. With the rise of health awareness, in addition to diet control, the supplement of health foods has become a trend for strengthening body functions and keeping good health. The purpose of this study was to explore the hypolipidemic and cholesterol-lowering mechanisms resulting from the cultured mycelium of submerged fermentation of Agaricus blazei. The Agaricus blazei fermentation broth was deployed into high, medium and low-dose concentration (100, 50 and 20% respectively), and then fed the mice. After 14 days, the blood urea nitrogen and blood lactate tests on mice were also taken. The results indicate that Agaricus blazei Murill fermentation liquid products make animal reduce their fatigue effectively. It can be used as the functional food for reducing the blood lipid level, enhancing immune function, and fast recovering from fatigue. These advantages contribute to human's demand of health.
