本計劃探討以咖啡因與多環芳香烴形成錯合物之特性,而將多環芳香烴自食用油中分離之方法,分析國內多種食用油中多環芳香烴的含量。採用此法之主要原因是經濟方便,且不需貴重儀器,其缺點在文中加以討論。
The analysis of polycyclic aromatic hydrocarbons (PAH) contents in some edible oils sold in local market was performed. A procedure which utilized the complex formation nature of PAH with caffein to quantitatively analyze PAH was used. The results and limitations of this method are discussed.
