摘要


於七十五年逢機抽驗台灣省北、中、南各縣市市售醬油,共計76家廠牌醬油300件,以濾紙層析法檢驗是否為釀造醬油或分解醬油,經檢驗結果,屬純釀造醬油者計129件,佔受驗醬油之43%,屬釀造及分解混合之醬油計158件佔52.7%;完全係分解醬油者計13件佔4.3%。標示純釀造醬油有58件,經檢驗證實僅44件其內容符合標示,14件與標示不符。顯示尚有四分之一之醬油製造廠家未依其產品內容試實標示。

Three hundred samples of market soy sauce produced by seventy-six makers were analyzed with paper chromatographic methed. 43% of total samples showed to be fermented style, 52.7% decomposed style while 4.3% showed to be mixed style. In 58 samples which were labelled ”pure fermented soy sauce”, only 44 samples were comfirmed to be fermented style by our tests.
