250 samples of marketed traditimal pastries were collected randomly from northern, central, southern and eastern area of Taiwan duning 1985. The additive status of coloring agents and preservatives were investigated. The result showed that 8 samples as 3.2%. were detected with illegal coloring agents. 15 samples were detected with propionic acid and its salts. 11 samples as 4.4% were detected with propionic acid higher than regulated contents 2.5g/kg, The maximum content detected was 12.67g/kg.
