Investigation on the Bleaching Agent of Food

876samples included 1. dehydrated vegetables & fruits (597 samples) 2. Maltose (62 samples) 3. Scallops (49 samples) 4. Rice noodle (168 samples) were purchased from the supermarkets and grocery stores in Taiwan area from January to May 1988 for sulfite analysis. The result indicated that 250 samples were detected positive (28.5%). Among the 250 samples, there were 40 samples against the limited content. The reation of unqualified samples was 4.6%. To be noticed, in the 597 samples of the dehdrated vegetables & fruits, we found 239 samples were detected positive (40.0%). 38 samples were not corressponding to the regulations (6.4%).
