Survey on the Bleaching Agent of Fruit Juice and Canned Fruit

100 Samples of fruit juice and canned fruit had randomly purchased from the supermarkets and food groceries in Taiwan area from July 1986 to June 1987. The sulfite and its salts were analyzed according to the published analytical method of Department of Health. The result showed that 7 samples was detected positively. The detected range of sulfite content was arroud 0.004-0.07g/kg. The violated rate of rative canned fruit was 3.2% (1/31). 77% (1/13) of imported canned fruit was agaist the limited content, 0.03g/kg sulfur dioxide residue for processed food.
