市售魚肉煉製品中過氧化氫殘留調查

Investigation of Hydrogen Peroxide Residue in Marketed Fish Processed Food

Two hundred samples of fish processed food, included fish ball, fish plate, and fish roll,…etc., were collected from supermarkets and retailed markets of northern area during 1987. Hydrogen peroxide was analyzed according to the analytical method of CNS 10893 N6189. Eighty four samples, as 42%, were detected with hydrogen peroxide. The violated percentages were 63%, 62%, 57%, 44%, 24% and 70% respectively for Hsinchu City, Ilan Hsien, Keelung City, Taipei City, Taipei Hsien and Tao-Yuan Hsien. The result of χ^2 Test showed the violated percentages of different areas was significantly different at df=5 and p=0.05.
