高粱製酒量與千粒重、澱粉含量及其結構之關係

摘要

選用高粱（Sorghum bicolor (L) Moench）30個R品系（雄稔性恢復品系）為材料，探討高粱製酒量與千粒種、澱粉含量及其結構之關係，結果顯示高梁製酒量與千粒重呈負相關，而與澱粉含量呈顯著正相關，其r值分別為-0.1275及+0.4404。千粒重與種皮含量呈顯著正相關，而與澱粉含量呈負相關，其r值分別為+0.499及-0.351。顯示籽實內澱粉含量愈多，則製酒量愈多，而千粒重愈重，則種皮含量愈多澱粉含量相對減少。同時製酒量與粉質（直鏈）澱粉含量呈負相關（r = -0.0116），而與臘質（支鏈）澱粉含量則呈正相關（r = +0.3134）。因此製酒量與千粒重、粉質（直鏈）澱粉含量均呈負相關。而與澱粉含量及其臘質（支鏈）澱粉含量均呈正相關。換言之，選育澱粉與臘質澱粉含量愈多之品系比千粒重大及粉質澱粉含量多者，較有利於釀製高粱酒。

This study were undertaken to evaluate the relations of Sorghum [Sorghum bicolor (L) Moench] 1,000-seed-weight, starch content and its structures to alcohol volume. The informations were provided to help in breeding the brewing wine sorghum hybrids. Thirty R lines were used in this study. These lines were selected with pedigree breeding method from a C3 population. The experimental results indicated that the correlation of alcohol volume to 1,000-seed-weight was negative and to starch content was significant positive, the r values were 0.1275 and +0.4404, respectively. However, the correlation between 1,000-seed-weight and seed coat content was significant positive (r = 0.499), the correlation between 1,000-seed-weight and starch, content was negative (r = -0.351). Therefore, it was clearly that the seed weight was mostly from seed coat than from that of starch. The correlations of alcohol volume to the contents of starch and amylopectin were positive, their r values were 0.4404 and 0.3134, respectively, but the correlation between alcohol volume and amylose content was negative (r = 0.0116) and the correlation between alcohol volume and amylopectin was positive (r = +0.3134). In other words, higher the, contents of starch and amylopectin was more the alcohol volume. Thus, inbred lines with higher contents of starch and amylopectin were more useful than those higher in 1,000-seed-weight and amylose content for breeding of wine brewing sorghum hybrids.
