摘要


本研究係根據三十家冷凍水產加工廠之調查資料,分析各種漁產品加工成本。一般而言,加工成本偏高,按產品別每公斤成本有22.42元到419.44元。原料,人工及能源費用是最重要的水產加工成本,台灣冷凍水產加工業很關切這些成本上漲。產業要具有國際市場競爭力,降低加工成本是相當正確之政策。採用自動化可降低加工成本,也可放進生產效率。成本函數評鑑指出,原料價格,生產數量,勞動投入及廠房面積是影響加工成本之重要因素。

The processing costs of the various types of fishery products were evaluated basedon a survey of 30 seafood processors.Processing costs for fishery products were relativelyhigh,ranging from NT$22.42/kg to NT$419.44/kg.In most cases,raw materials,labor,and energy expenses comprised the bulk of processing costs.The frozen seafood processing industry in Taiwan has been concerned about increase in these costs.To be competitivewith other countries in seafood expert markets,cost-cutting in the Taiwan seafood processing industry is highly desirable.Automation could improve production efficiency andcontribute toward lower processing costs.The cost function assessment indicated that theprices of raw materials,production volume,labor,and plant size were the significantfactors influencing the processing costs.
