山藥片乾燥之基礎研究

The Fundamental Study on Mechanical Drying of Yam Slices

摘要


本研究使用烤箱熱風與吸附除海進行山藥片乾燥基礎測試,烤箱熱風乾燥溫度為40、50、60、70與80℃吸附除濕乾燥溫度為20、25、30、35與40℃,試驗結果接致烤箱熱風與吸附除濕乾燥之最佳乾燥溫度分別為40與30℃,各別皆可獲致最佳品質之乾燥試驗乾品,而進一步之品質分析結果又以吸附除濕乾燥之樣本乾品較佳。

The fundamental drying tests of yam slices using the hot-air drying and the desiccant dehumidification drying were performed in this research. The temperatures for the hot-air drying were, 40, 50, 60, 70 and 80℃, whereas 20, 25, 30, 35 and 40℃ for the desiccant dehumidification drying. The experimental results showed that the optimum drying temperatures obtained of yam slices were respectively 40℃ for the hot-air drying and 30℃ for the desiccant dehumidification drying. Both obtained the best quality of drying products in each drying method. Moreover, the quality of the yam slice samples using the desiccant dehumidification drying was better than the one obtained using the hot-air drying.
