不同乾燥方式對土肉桂葉乾燥及抗氧化特性之影響

Effects of Different Drying Methods on Cinnamomum osmophloeum kaneh Leaf and Antioxidant Activity

摘要


本實驗針對傳統熱風40℃、低濕40℃、低濕50℃、低濕60℃及日曬等不同方式進行土肉挂葉之乾燥資驗,探討此五種乾燥條件下之土肉桂葉乾燥特性曲線,並分析顏色色度差、抗氧化能力和肉桂醛含量等,期能找比最理想之乾燥方式,以提供種植土肉桂農民及土肉桂加工業界之參考。 實驗結果顯示:傳統熱風4℃乾燥土肉桂葉達平衡之時間為6h,其平衡含水率為10.10%。低濕40℃、50℃及60℃乾燥土肉桂葉,達平衡之時間分別為5h、25h及2h;其平衡含水率分別為7.48%、2.44%及1.92%。日曬法乾燥土肉桂葉達平衡之時間為5h,其平衡含水率高達10.33%。 低濕40℃及50℃乾燥之土肉桂葉其顏色品質較其它處理明顯亮綠。在清除DPPH自由基能力方面低濕40℃乾燥土肉桂葉能力最高,依序為低濕50℃、低濕60℃、日曬法、傳統40℃、農會提供之處理A與處理B。在螫合亞鐵離子能力方面以低濕40℃及50℃有最好的效果,依序為低濕60℃、傳統熱風40℃、日曬法及農會提供之處理A與處理B。針對肉桂酫含量之分析,低濕40℃乾燥土肉桂葉之肉桂醛含量最高,依序為農會提洪之處理A與處理B、傅統40℃、日曬法、低濕50℃和低濕60℃綜合各項實驗結果,以低濕乾燥機乾燥土肉桂葉可縮短乾燥時問,降低平衡含水率,且可得到較佳之色澤,最高之抗氧化能力和肉桂醛含量。故以低濕40℃為最好之土肉桂乾燥方式。

The traditional 40 °C, sun dried low humidity 40℃, 50℃ and 60℃ drying methods were used to dry Cinnamomum osmophloeum kaneh leaf products in order to study the drying characteristic curves under the five different methods. Also, antioxidant activity, color of the products and the cinnamaldeyhde content of the products were determined to investigate the optimal drying method for Cinnamomum products farmers. Experimental results showed that the drying time for the traditional 40℃ drying method, low humidity 40℃, 50℃, 60℃ drying methods and sun dried were 6h, 5h, 2.5h, 2h, and 5h, respectively. The equilibrium moisture contents were 10.10%, 7.48%, 2.44%, 1.92%, and 10.33%, respectively. The color change of the low humidity 40℃ and 50℃ drying methods were less than that of the traditional method, which meant the quality of the low humidity methods was more stable. In the aspect of scavenging effect on DPPH radical activities, the low humidity 40℃ drying method preduced the highest capacity, followed by low the humidity 50℃, 60℃ drying methods, sun dried, traditional 40℃ drying method, treatment A and treatment B. Regarding the metal chelating activities, the best results were obtained in the low humidity 40℃ and 50℃ drying methods, followed by the low humidity 60℃ drying methods, the traditional 40℃ drying method, sun dried, treatment A and treatment B. Regarding the cinnamaldeyhde content of the Cinnamomum osmophloeum kaneh leaf, the low humidity 40℃ drying method produced the highest content, followed by treatment A, treatment B, traditional 40℃ drying method, sun dried low humidity 50℃ and 60℃ drying methods. In conclusion the appearance of color, moisture contents, antioxidant activity and cinnamaldeyhde content of Cinnamomum osmophloeum kaneh leaf treated by low humidity drying methods were significantly better than the other methods. It shortened the drying time and lowered the moisture content. Therefore, low humidity 40℃ methods emerged as the optimum drying method.
