省產大花黃梔子色素之研究
Study on the Pigment of Cape-jasmine Fruit
摘要
省產大花黃梔子（Gardenia jasminoides Ellis forma grandiflora Makino）之果實經分析結果含黃梔色素（約25%），以番紅花苷（Crocin約21%）為主成分，此外為胡蘿蔔烴類（Carotenoids）及Iridoid苷（Glycosides）等。黃梔色素可溶於水，染色力良好；經試管試驗及動物試驗結果，顯示其毒性極低，自古以來該色素相襲沿用，作為食物之天然著色劑。

Ripe fruits of cape-jasmine (Gardenia jasminoides Ellis forma grandiflora Makino) yielded 25% alcohol soluble crude pigment. Further purification of the crude extract yielded crocin (21.77%), geniposide (21.8%) and other unidentified glycosides (total 30.37%). The crude pigment is highly water soluble. Toxicity tests of the pigment were conducted in mice. The experimental animals were fed with a 200-fold higher as compared to the quantity used in foodstuff for two generations without any deleterious effect.
