不同含量乾燥高粱酒糟飼糧對臺灣黑羽土雞肝臟與腹脂重量及胸肉品質之影響

The Effect of Dietary Dehydrated Sorghum Distillery Residue Levels on Liver and Abdominal Fat weight and Breast Meat Quality in Taiwan Black-Feather Native Chickens

摘要


本試驗旨在探討飼糧中添加不同高粱酒糟含量對臺灣黑羽土雞肝臟與腹脂重量及胸肉品質之影響。選取4週齡體重相近臺灣黑羽土雞288隻,逢機分成4處理組,分別餵飼同熱能與等蛋白之不同含量高粱酒糟飼糧;即0%、10%、20%與30%高粱酒糟飼糧之處理組,每處理組雞隻公母各半,採平飼,每性別飼養於1欄,每欄12隻,3重複,共24欄。試驗期為12週。各處理組之雞隻於不同生長階段採食同熱能與等蛋白質之飼糧(5-8週齡:粗蛋白(%)/代謝能(kcal/kg):21/3100;9-12週齡:粗蛋白/代謝能:21/3000;13-16週齡:粗蛋白/代謝能:19/3100)飼料及水採任食試驗期間分別在土雞8、12與16週齡屠宰,分析土雞肝臟與腹脂重量及胸肉品質。結果顯示在8、12及16週齡雞隻之肝臟絕對與相對重量,各處理組在二性別間均無顯著差異。高粱酒糟僅會影響8週齡雌黑羽土雞之絕對與相對肝臟重量(P<0.05),然而在12及16週齡雌與雄黑羽土雞在處理間則無顯著的差異。在8週齡高粱酒糟飼糧會影響胸肉顏色之a^*、b^*值與胸肉剪力值;但在12與16週齡時,臺灣黑羽土雞雄與雌雞胸肉之L^*、a^*、b^*值與胸肉剪力值在各處理組間均無顯著差異。雌雄雞合併計算時,各生長階段處理組之間在胸肉顏色、嫩度、多汁性、風味與總接受度分數方面亦無顯著差異。綜合上述基於不同含量乾燥高粱酒糟飼糧對臺灣黑羽土雞在16週齡上市之肝臟、腹脂重量及胸肉品質均無顯著影響,所以使用30%以內之高粱酒糟可以滿足土雞營養需求。

The objective of this study is to investigate the effect of different dietary dehydrated sorghum distillery residue (DSDR) levels on liver and abdominal fat weight and breast meat quality in Taiwan black feather native chickens. Two hundred and eighty eight 5-week-old Taiwan black-color native chickens (144 male and 144 female) with similar body weight were divided into 4 group. Twelve bird were fed in one floor pen of each gender in each group with 3 replicates and fed one kind of isocaloric and isonitrogenous diets containing 0, 10, 20 and 30% DSDR for 12 weeks. The diets used for 5-8, 9-12 and 13-16 week-old chickens were mash feed with CP(%)/ ME (kcal/kg) as 21/3100, 21/3100 and 19/3100, respectively. Feed and water were supplied ad libutum. During the experimental periods, the chickens were sacrificed at 8, 12 and 16 weeks of age, respectively. And the liver weight, abdominal fat weight and breast meat quality were analyzed. The results showed that there was no significant difference between the absolute and relative liver weight of chicken at 8, 12 and 16 weeks of age for both male and female birds. The DSDR affected only the relative and absolute liver weight of 8-week-old female black feather native chickens (P < 0.05), whereas there was no significant difference between the male and female Taiwan black feather native chickens at 12 and 16 weeks of age in each treatment. At 8 week of age, diets content DSDR affected the color of a^*, b^* value and shearing values of breast meat, but at 12 and 16 week of age, there was no significant difference in L^*, a^*, b^* values and breast meat shear force among the treatments. there was also no significant difference in the color, tenderness, juiciness, flavor, and total acceptance scores among the treatments at each growth stage. In summary, based on diet contenting the different level of DSDR no significant impact on the 16-week-old Taiwan black-feather chicken in liver and abdominal fat weight and breast meat quality, Therefore, the use of DSDR within 30% to meet the nutritional needs of Taiwan black feather native chickens.
