甘藷葉粉微膠囊噴霧乾燥製造之研究

Study on Microcapsule Manufacture of Sweet-Potato Leaf Powder by Spray Drying

摘要


葉綠素(Chlorophyll)是自然界植物中維持生長所需的重要色素,存在於所有能進行光合作用的植物體中。在食品工業中,對於如何保持綠色加工產品中的葉綠素不被破壞相當重視。但因為葉綠素的好藏穩定性差,使之做為食用色素的應用上,受到極大的限制。另一方面,甘藷葉營養豐富與富含葉綠素,因此,本研究擬利用噴霧乾燥法製備甘藷葉綠素微膠囊,以期維持好的品質及開發新產品。結果顯示,微膠囊化生產過程中,較佳壁材比是以阿拉伯膠和麥芽糊精以1:1(w/w),芯壁材1:4(w/w)比例混合較佳,當噴嘴壓力固定為6kg/平方公分時,較佳噴霧乾燥操作條件為:入口溫度為160℃、出口溫度為85-90℃、進料流速5.5mL/min及噴霧空氣流量800Nl/h,微膠囊經四個月貯存,色澤指標-a/b可達到0.4及葉綠素保留率仍可達到86%以上。

Chlorophyll is one of important pigments to maintain growth for plant, and can be found in those plants which can carry on photosynthesis. For food industry, to maintain the chlorophyll in the green products is getting more and more attention. Because the storage stability of chlorophyll is poor, used chlorophyll as a pigment in the food application is greatly restricted. On the other hand, the sweet-potato leaf is nutritious and rich in the chlorophyll. In this study, we develop a new product, the sweet-potato leaf powder microeapsule, by using spray drying. The results showed that in the course of microeneapsulation of natural chlorophyll, the best wall material is gum Arabic and maltodextrin, at the ratio of 1: 1 (w/w), and the suitable proportion of the core material and the wall material is 1:4 (w/w). The optimal spray drying condition for mieroencapsulation of the chlorophyll is as follow: the inlet temperature is 160℃, the outlet temperature is 85-90℃, the feed flow rate is 5.5 mL/min, and the spray of air flow rate is 800Nl/h, respectively. The color index ratio -a/b was 0.4 and chlorophyll retention percentage was above 86% after 4 months storage.
