台灣金線連酒製品對沙門氏菌(Salmonella typhimurium)之致變異性評估

Evaluate the Mutagenicity of Anoectochilus formosanus Hayata Wine on Salmonella typhimurium Strains

摘要


台灣金線連(Anoectochilus formosanus Hayata, AFH)具有保肝、鎮痛、利尿、降血糖及降血壓等保健功效,唯以其萃取物配合其他原料調製而成的酒製品-台灣金線連酒,在商業量產前,仍應進行產品安全性評估。本研究係採用安姆氏試驗法(Ames test)測試台灣金線連酒製品對沙門氏菌(Salmonella typhimurium) TA98、TA100、TA102、TA1535及TA1537等菌株基因回復突變之致變異性(reverse mutagenicity)。結果顯示,不論供試培養基中是否添加大鼠肝臟活化酵素抽出液(S9),台灣金線連酒製品不同處理濃度(5000、2500、1250、625及312.5 μg/plate)對於沙門氏菌的回復突變菌落數(colony forming unit, CFU)皆與陰性對照組無顯著差異,本試驗結果將有助於台灣金線連生技產品後續的研究與發展。

Anoectochilus formosanus Hayata (AFH) extracts are known to have health effects on protection of liver injury, easing pain, increasing diuresis, and decreasing hyperglycemia and hypertension. However, the safety of AFH wine, made of AFH extracts with other materials, is still needed to be elucidated before marketing. The purpose of this study was to evaluate the mutagenicity of AFH wine on Salmonella typhimurium strains TA98, TA100, TA102, TA1535, and TA1537. The Ames test showed that, either in the presence or absenceof the rat liver extract (S9 mixture), no reverse mutagenicity of AFH wine (5000, 2500, 1250, 625, and 312.5 μg/plate) on all five strains tested can be detected when compared to the negative control. The results of this research represent a significant contribution on the development of the AFH bioproducts.
