以蒸餾法、離子交換層析法及試紙法檢測金針乾製品中二氧化硫之殘留量

Determination of Sulfur Dioxide in Dry Daylilies (Hemerocallis fulva L.) by Distillation, Ion Exchange Chromatography and Test Strip Assays

摘要


金針是國人飲食中常見的食材之一,市售金針以加工乾製品為主。為保持金針乾製品金黃色澤及口感,加工過程中添加亞硫酸鹽以取代殺菁達到保色之目的,再經漂水乾燥後即可長期保存。衛生署規定亞硫酸鹽可使用於金針乾製品,用量以金針之二氧化硫殘留量計為4.0 g/kg以下。為了快速篩檢市售金針乾製品之二氧化硫殘留量,以確定是否符合殘留容許量,本研究同時以公告方法(蒸餾法)、離子交換層析法及商業檢測試紙檢測金針乾製品中二氧化硫殘留量,並進行比較。20件市售金針乾製品檢測結果,以商業試紙測出有九件疑似超過衛生法規標準,其中七件以蒸餾法及離子交換層析法確認超過殘留容許量,結果顯示利用商業試紙皆可篩檢出超量檢體,故可應用於現場試驗作為快速篩檢,以確保上市產品符合衛生法規標準,惟準確定量仍需以蒸餾法進行檢驗。

The dayliliy (Hemerocallis Fulva L.) is one of the common ingredients in the Chinese diet and commercial daylilies are usually sold as dry products. In order to keep the color and taste of daylilies during long-term storage, sulfite is added for replacing the procedure of blanching and bleaching, followed by steeping and drying. Department of Health has announced that sulfite treatment is permitted in processing dry daylilies and set a 4.0 g/kg maximum residue level (MRL) measured as residue level of sulfur dioxide. In this research, we compared sulfur dioxide residue level obtained by the official method of analysis (distillation), ion exchange chromatography and a test strip assay for 20 samples of dry daylilies obtained in the markets. By means of a test strip assay, sulfur dioxide residue levels were over the criterion in nine samples. Among these 9 daylilies, 7 were confirmed using a distillation method and ion exchange chromatography. Results showed that the test strip assay was able to screen out positive samples and possibly can be applied in the field for rapid screening to ensure product quality. Furthermore, it is still necessary to use the offical distillation method to confirm and quantify the amount of sulfur dioxide of the positive samples from the rapid test.
