葫蘆科(Cucurbitaceae)果實抗氧化能力之研究

本試驗分析農友公司提供之小胡瓜、絲瓜與苦瓜3種葫蘆科(Cucurbitaceae)作物之抗氧化酵素活性,包括超氧化物歧化酶(Superoxide dismutase, SOD)、過氧化氫酶(Catalase, CAT)、抗壞血酸過氧化酶(Ascorbate peroxidase, APX)與過氧化物酶(Peroxidase, POD)等,以建立葫蘆科果實中抗氧化酵素活性作為耐逆境指標之可行性探討,並作為消費者食用及育種上之參考。試驗結果顯示小胡瓜3個品種中,以'翠娘'具有較高的抗氧化酵素能力,'翠姑'次之,'夏青'之SOD、CAT、APX及POD活性顯著低於'翠姑'與'翠娘';在絲瓜3個品種中,則以'F1834'之CAT活性顯著高於'阿俊'和'F100-1719',且其SOD、APX及POD活性與其他兩者差異不顯著,因此'F1834'為絲瓜較佳之品種;苦瓜品種中'英翠'的SOD及POD活性較高於'小月'、'碧青'與'秀月'等品種。因此'英翠'為苦瓜較佳之品種。

This study examined the antioxidant enzymatic activities in three cultivated cucurbit (Cucurbitaceae) plants. All seeds from cucumber, sponge gourd, and bitter gourd were provided by Known-You Seed Co., Ltd. These enzymes included superoxide dismutase (SOD), catalase (CAT), ascorbate peroxidase (APX) and peroxidase (POD). In this study, the antioxidant enzymatic activities were compared among the fruits from various varieties in the three species to establish the possibility of these antioxidant enzymatic activities in cucurbit fruits could be taken as indicators for stress tolerance. The obtained results were aimed to provide further insights into human consumption and breeding. The results showed that among three cucumber varieties, "F-2683" has the highest antioxidant enzymatic capacity followed by "F-2687"; and the activity of SOD, CAT, APX, and POD in "CB-1341" was significantly lower than "Plentiful Green" and "Aladdin". Among the three sponge gourd varieties, the CAT activity in "F1834" was significantly higher than "F-1340" and "F100-1719", while no significant difference in SOD, APX, and POD activities was found when comparing "F1834" to the other two varieties. It is therefore suggested that "F1834" is a better variety in sponge gourds which against stresses. Among the bitter gourd varieties, the activity of SOD and POD in "F-2486" was greater than "New moon", "Verdant", "Showy", and other varieties. Therefore, "Yingzui" is considered as a better variety in bitter gourds.
