參旅技職教育建教合作班校外實習學生特性、實習滿意度與實習成效之相關研究

摘要


本研究為瞭解高職餐飲管理科參與建教合作學生特性、實習滿意度與實習成效之關係,透過問卷調查高雄市地區設有建教合作班的餐飲管理科學校,共計發放394 份問卷,回收374 份,刪除無效問卷46 份,有效問卷328 份,有效回收率高達87.7%。研究結論如下:(1)高職餐飲管理科建教合作班的學生在實習滿意度與實習成效一般均感到滿意。(2)不同「性別」、「實習單位」、「實習部門」與「打工經驗」的餐旅技職教育學生在實習滿意度上有顯著差異。(3)不同「性別」、「實習單位」、「實習部門」與「打工經驗」的餐旅技職教育學生在實習成效上有顯著差異。(4)實習滿意度對實習成效有部分影響效果,其中實習滿意度中的「訓練課程」對實習成效中的「服務技能」、「職場倫理」與「企業管理」的影響效果最大。

Because the industry and economic structure have changed in recent years in Taiwan and government promotes travel and tourism, hospitality industry becomes a popular industry. The demand for the professionals increases. Also, many schools have set up the relevant departments, including cooperative education. Therefore, the aim of the study is to explore the intern students' characteristics, internship satisfaction and the internship effectiveness of the cooperative education in hospitality vocational high school students. A questionnaire was submitted to four Vocational High School Cooperative Education Classes of Hospitality in Kaohsiung, during 15th March to 15th April 2013. 374 questionnaires were issued, 46 were invalid and 328 valid questionnaires were obtained with the availability rate of 87.7%. The data analysis methods include descriptive statistics, reliability analysis, item analysis, confirmatory factor analysis, independent sample t-test, ANOVA analysis, and multiple regression analysis. The results are as follows: A. Generally speaking, the intern students in cooperative education in food and beverage management major are satisfied with the internship satisfaction and internship effectiveness. B. There are significant differences of the internship satisfaction on different genders, different intern workplaces, different intern departments and part-time job experiences in hospitality vocational high school students. C. There are significant differences of the internship effectiveness on different genders, different intern workplaces, different intern departments and part-time job experiences in hospitality vocational high school students. D. Internship satisfaction has partially influenced on internship effects. Especially the dimension of training courses has larger impacts on service skills, working ethics and business management of internship effects.
