學生對食品安全與食品添加物認知研究

近年食品消費需求朝精緻改變，因此食品添加物被廣泛應用，食品添加物雖有其必要性，長期或過量攝取可能對人體健康產生危害，尤其大學生外食情形非常普遍,大學生的食品安全認知程度能代表未來社會食品消費的主流價值觀，故本研究在了解大學生對當前食品安全問題與食品添加物的認知為研究目的。透過400位大學生問卷調查，並進行差異性檢定及相關分析，發現受測大學生以21-30 歲未婚女性對食品安全與食品添加物認知較注重。大學生不同之家庭每月收入、每月生活費、具有餐飲或觀光餐旅教育科系者對食品安全與食品添加物認知關係呈顯著正相關，且大學生對於「食品關注度」與「添加物風險」認知概念越清楚時，對「食品檢驗標章」的認同性和「添加物選購」能力也會隨之增加。另外非觀光、餐飲（旅）等大學系所對食品安全與食品添加物的認知能力則較欠缺或較不重視，若對食品添加物的瞭解不足，將容易受到部分媒體面片報導影響，產生不正確認知與不安之心理。

In recent years, food demand for consumption become more and more delicate, so food additives are widely used, though food additives have its necessity. Long-term or excessive ingestion may be harmful to our health, especially the situation for the college students to eat outside is very common. Food safety awareness of college students represent the future mainstream social values for food consumption, so this study’s purpose is to understand the college students’ cognition for food safety issues and food additives on the current food. Through 400 college students’ questionnaire, by getting on difference test and analysis in test, we found that the unmarried female during 21 to 30 year-old university students pay much attention to the cognition on food safety and food additives .The different monthly household income, monthly living expenses, those who with repast or sightseeing education background cognize positively correlated food safety and food additives .And the more clear college students’ respect to the ＂food concern＂ and ＂additive risk＂ cognitive concept, the ability will increase for ＂food inspection mark＂ recognition and ＂optional additives’'. Furthermore, the students don’t have repast or sightseeing education background are lack of cognitive ability of Food Safety and Food additives or disregard the importance of that. If the lack of understanding of food additives will be easily impact by some media reports, and thus generate incorrect cognition and disturbing by that.
