Extraction and characteristics of seed oil from Papaya (Carica papaya) in Congo-Brazzaville

Papaya seeds were collected and dried. This study was carried out on papaya seed to clarify their proximate composition and the characteristics of the extracted oil including unsaponifiable matter and fatty acid composition. The seed is a rich source of protein (26.78%) and crude fiber (21.4%). Palmitic acid was the main saturated fatty acid (15.22%), while linoleic acid was the major unsaturated fatty acid (76.38%) in all lipid classes. The physical properties of the oil extracts showed the state to be liquid at room temperature. Carica papaya seeds have ash content of 3.2% (with the presence of following minerals: K, Na, Ca, P and Mg). However, Ca and P occur in appreciable quantities (1821±2.12 mg/100 g dry matter and 1156±1.8 mg/100 g dry mater, respectively).
