觀光旅館業內場廚師之社會網絡關係研究

Social Network of Chefs-A Case Study of Northern Taiwan

摘要


過往的社會網絡研究以一般企業為對象居多,較少針對餐旅服務產業來進行討論。以廚房的組織特性而言,必需透過團隊合作及良好的互動關係才能完成工作目標,因此瞭解一個組織中社會網絡的結構樣貌將相形重要。本研究將以台灣北部二間觀光旅館業的內場廚師為對象,透過問卷調查法及UCINET的分析法,來瞭解在不同的單位中,個人層次包括職務特性及團體層次的社會網絡架構。本研究的目的如下:1.瞭解餐廳內場廚師團隊的社會網絡密度及群體中心性。2.瞭解餐廳內場廚師團隊的的職位高低與社會網絡密度及群體中心性的關係。3.瞭解餐廳內場廚師團隊之年資與社會網絡密度及群體中心性的關係。預期研究之成果將可提供內場工作團隊在未來在管理上的一些建議。

Previous research on social networks were mostly targeted to general business, and less for the hospitality services industry . In terms of organizational characteristics of the kitchen, must interact through team work and good relations in order to achieve goals and to understand the structure of social networks in an organization. This research to five star hotels in the Northern Taiwan , through a questionnaire, and UCINET analysis method to learn about the different units and personal levels include title attributes and group levels of social network structure. The purposes of this study were as follows: 1. Understand the social network density and centrality of the team of chefs 2. Understand the relation between position and social network density and centrality. 3. Understand the relation between work experience and social networks density and centrality. Expected results of the research will provide ideal solution in the future.
