隨著國人每年國民所得逐年增加及生活品質的提升,近年來國內民眾越來越重視休閒生活並利用閒暇時間來參與休閒旅遊活動,因此對休閒遊憩各項需求亦隨之大幅增加。在眾多休閒遊憩的場所之中,用餐品質也成為旅客對選擇是否在此景點停留的重要指標。本研究針對至新北市深坑區深坑老街中餐廳用餐的消費者,由研究員親自於調查地點以便利抽樣方法發放問卷,進行行前期望及購後行為的問卷調查。經過問卷分析結果顯示消費者年齡層分布於30歲以下,個人月收入以10,000元以下為最多,搭乘交通工具方面,自用汽車最多,主要遊伴人數方面,以3~5人最多,用餐花費方面,多為500元以下,用餐時段都集中在中午前後。消費者之行前期望與實際體驗滿意度差異最大的幾項為:「停車空間」、「廁所清潔衛生」、「餐具清潔衛生」、「環境清潔衛生」、「菜餚清潔衛生」、「菜餚新鮮度」等等幾項。因此本研究針對問卷分析結果對深坑老街中餐廳的業者及管理者提出幾項改善建議包括改善餐點販售方式、改良停車方式及空間以及改善清潔條件等具體建議,作為深坑老街社區再造及餐飲業者之改進參考。
This study examined the customers' importance and satisfaction of the quality and service quality of the meal served in the Chinese restaurants, Shenkeng Old Street. The results revealed that consumers were most under 30 years old, incomes were under 10,000 N.T., and the most popular transportation to Shenkeng is by vehicle. The money that most consumers spend for each meal is under 500 N.T. The dining time for most consumers to Shenkeng is between 11 a.m. to 5 p.m. The issues that consumers concerned and were expected to improve were "parking space", "rest room hygiene", "tableware hygiene", "circumstances cleaning", "dish hygiene" and "food freshness". respectively Therefore, the authors suggest the Chinese restaurants on Shenkeng Old Street to design a set of meal for three to five people , to increase the parking space and to improve the hygiene in the restaurants.
