收集台灣產豆薯、高梁、及百香果等三種含澱粉作物或果實為原料,進行一般成分分析。另進行各種含澱粉作物或果實之澱粉分離及其成分分析,就所分離三種澱粉測定其粒徑大小平均粒徑、青價、直鏈澱粉(amylose)含量,繪製糊化溫度曲線及Brabender amylogram,進行掃描式顯微照相。
Three kinds of crops or fruit, such as yam bean, sorghum, and passion fruit produced in Taiwan were used as samples in this experiment. The following experiments were carried out: (1) Proximate analysis including moisture, crude protein, crude fat, crude fiber, ash, and starch contents of experimental crops of fruit. (2) Isolation of starch from experimental crops or fruit, and proximate analys is of prepared starches. (3) Measurement of physical and chemical properties such as granular size, blue value and amylose content, photograph by scanning electron microscope, and description of photopastegram and Brabender amylogram of each of three kinds of starches.
