日本沖繩縣被稱為長壽地區,「沖繩料理」獨特的飲食文化,其自然及人文地理等歷史背景與台灣相似,此研究著重於沖繩的傳統料理和台灣代表性的家庭料理的比較。食材上,穀類、豆類及肉類是在沖繩和台灣都有使用的食材,整頭豬全部食用是和台灣相似;薯.澱粉類及蔬菜類,兩者的食材非常相似,但黃豆渣在沖繩被食用,台灣並不常見;但對於藻類的攝取,沖繩多於台灣,差異性大;其次是烹調方法,在台灣也有數種和沖繩相同,結果顯示沖繩和台灣的傳統料理非常相似,彼此關聯性高。將藻類等部分食材引進台灣,利用已有的食材,將沖繩的傳統料理普及化,促進兩國之飲食文化交流,達到長壽健康的目標。
It is known as a longevity area in Okinawa of Japan. 「Okinawa cuisine」 is a unique food culture. Its culture shows similarities to Taiwanese cuisine from its historical background. Therefore, in this study, we focused on the comparison between Okinawa traditional cuisine in Okinawa and the representative of home cooking in Taiwan. Firstly, the foods, such as cereals, beans, meat are used in Okinawa and Taiwan. The Okinawan pork cuisine is similar Taiwanese, in which every part of the pig is utilized. In addition, potatoes, starches and vegetables are very similar to Taiwanese cuisine. Tofu refuse is cooked in Okinawa, but not in Taiwan. However, it is a big difference that for algae, many types are used in Okinawa and only one type is used in Taiwan. Secondly, some of the cooking method of Okinawa was found to be exactly the same as that of Taiwanese. Therefore, there are very similar dishes, mean there are very high relevance of the food culture between Taiwanese and Okinawan cuisine. Introduce some ingredients such as algae to Taiwan. Using the existing ingredients, or popularizing Okinawan traditional cuisine in Taiwan. It can promote the exchange of food culture between Taiwan and Okinawa to achieve the goal of longevity and health.
