口腔餵食GMP對雄性大白鼠攝食及攝水之影響

摘要


海鮮食物中的游離胺基酸及核苷酸可增強食物之鮮美度,所引起令人歡喜口感之味覺被稱為Umami。在食品工業中使用的高鮮味精成分之一即是核苷酸中之一種-Guanisine 5’-Monophosphate (GMP),本次實驗是以口腔餵食成熟雄性Sprague-Dawley大白鼠GMP每日兩次連續五天餵食,觀察其攝食及攝水量之變化。由結果得知GMP (0.2mg或0.2mg/day/rat)顯著增加大白鼠全天攝食量,但對攝水量則無顯著性之影響,因此本實驗推論GMP有促進雄性大白鼠食慾之作用。

Free amino acid and derivatives of 5'-ribonucleotide are widely used as food additive to enhance palatability of food to produce the spcial taste, called Umami. Guanosine 5'-monophosphate (5'-GMP) is also used as ingridient of super-seasoning to improve the taste of food in the food industry in Taiwan. In this study we show that intraorally feeding adult male Sprague-Dawley rats 5'-GMP (0.2mg or 2mg/day/rat) twice daily for 5 days significantly increased average food intake, but not water intake. These results suggest that 5'-GMP increases feeding via mechanism of taste in the tongue.
