烏龍茶粒度大小對兒茶素及維生素丙溶出量以及貯藏性之影響

摘要


袋茶是既方便又不致與成茶風味相差太多的茶製晶,本實驗即是以不同粒度大小之鳥龍茶模擬袋茶沖泡方式,探討茶葉中之兒茶素及維生素丙溶出量及脖藏性問題。方法是以20mesh↓,20-40mesh,40-60mesh,60-80mesh,80-100mesh 幾種粒度之茶葉為原料,以80℃、90℃、100℃去離子水沖泡0.5min至10min,探討其兒茶素及維生素丙溶出量,並且以真空包裝、聚乙烯瓶裝以及聚乙烯瓶裝置於乾燥器中三種貯藏方式貯藏16週,探討其兒茶素溶出量及自貯藏品質。茶葉兒茶素溶出量會隨沖泡溫度之提高、時間之增長以及粒度之減小而增加;貯藏有最高之見茶素溶出量。茶葉維生素丙溶出量方面,在所使用之沖泡溫度中,粒度越小其維生素C溶出量越高;溫度之影響方面,除20m e s h以上粒度之維生素丙溶出量為100℃> 90℃> 80℃外,20~40mesh及60~80mesh之茶葉其維生素丙溶出量均為80℃ > 90℃> 100℃。至於貯藏品質方面,不論茶葉粒度為何, 真空貯藏及聚乙烯瓶裝置於乾燥器中貯藏者自貯藏16週後仍保持品質;而聚乙烯瓶裝貯藏者,粒度大於60 mesh以上時仍可保持品質,一旦粒度小於60mesh以下時,16週後之茶葉已有劣變可能。

Tea bag is a tea product which is convin and its flavor and taste is not far away from made tea. The purpose in this study is to infuse Oolong tea of various particle size by the infusing way of tea bag in order to investigate the infusions of catechins and vitamin C and the quality of teas after storage. The infusions of catechins and vitamin Care invesigated with Oolong tea of particle size of 20 mesh below , 20-40 mesh , 40-60 mesh , and 80-100 mesh as materials , infused by deioned water of 80℃ , 90℃ , 100℃ for 0.5min to 10min. The infusian of catechins and quality of tea after storage are also investigated with the storing package of vacuum pouch , PE bottle and PE bottle in desiccator 16 weeks. Infusion of catechins in Oolong tea increase as infusing temperature and time increasing as well as particle size decreasing. There is higer infusion of catechins when tea below the particle size of 60 mesh is stored in PE bottle for either 8 or 16 weeks. The infusion of vitamin C in tea increases as the particle size decreasing. Particle size of tea above 20 mesh , the infusion of vitamin C is 100℃ >90℃ >80℃ (temperature of deioned water); particle size of 20-40 mesh and 60-80 mesh , the infusions of vitamin C are all 80℃ > 90℃> 100℃ .No matter how the particle size is, teas stored both in vacuum pouch and PE bottle in desiccator for 16 weeks still keep good quality; but deterioation may occur on tea that particle size below 60 mesh stored in PE bottle for 16 weeks.
