當今中國人的飲食養生觀

Health-Related Dietary Attitudes in Contemporary Chinese

摘要


影響飲食攝取與營養狀況的態度、想法、習俗與禁忌等飲食養生觀,在我國起源久遠,維繫著各種疾病狀態與不同生理階段的飲食行為。隨著生活型態的變遷,科學新知及資訊的衝擊,家庭結構的改變,當今中國人對飲食養生還保留怎樣的看法?在患病時又如何調適?就文獻回顧居住在美國、英國、中國大陸......等地的華人,其懷孕、產後、進補、嬰兒餵養及補血、感冒等之飲食方式,顯示出:傳統的陰陽冷熱觀念所引發對食物的分類與選擇,仍相當普遍的在各地華人界流傳。另調查台北居民對食補、食療、食物冷熱等重要性之看法,以及對補血、進補、作月子及一般疾病情況的飲食習俗與禁忌的看法,並與營養專業人員的看法對照比較。

Folk food beliefs and food therapy prevail in man y parts of the world. Health related attitudes, beliefs, customs and taboos affecting diet and nutrition are associated with food practices mainly as they affert stales of health and illness. Review of the literature of Chinese living in the U.S., England and mainland China indicated their food behaviors for preganancy, post-partum, child feeding and blood-building remain closely tied to the cold-hr' (yin-yang) concept. This research studies attitudes of Chinese living in Taipei toward the beneficial and therapeutic effects of certain foods on their physiological status as well as on diseases. Discrepancies between the general public and dietetic professionals will be discussed.
