臺灣飲食文化,長期以來在深厚的經濟條件,加上國人的「生活素質」(Quality of Life)的自主與反思,逐漸開出美食系列,馴至飲譽中外;臺北儼然是一座飲食天堂。然而,若干相關的研究固然不乏卓識,但是宏觀的討論,則相當缺乏。本文之嘗試,緣此而起。內容有五部分,即:一、前言;二、中國的飲食文化;三、飲食地圖;四、臺灣的美食;五、結論。方法上,文獻資料與田野調查並行,加之以親身的驗證;最後歸納出臺灣美食系列及其特殊的味道境界。希望本文的分析,能提供國人對「臺灣美食」的進一步探索與了解。
Becuse of Taiwan's affluence and local people's growing demands for their "Quality of Life," Taiwanese Cuisine has become more and more popular all over the world and Taipei has actually become "the heaven for gourmets." Of course, research made in this areas is not unusual; yet so far, there is no comprehensive and thorough work that can be regareded as s standard. Therefore I have decided to write this article which includes five parts: that is, Foreword, China's Culinary Culture, the Distribution of Chinese Food, Taiwanese Cuisine, and Summary. Methodically, with written materials going hand in hand with actual field survey, I also apply my personal experience to the final result: a research of Taiwanese Cuisine and its special flavor. Through this analysis, I hope my readers can have a better understanding of "Taiwanese Cuisine."
