山葵(Eutrema japonicum (Miq.) Koidz.)因本身兼具食用與藥用的價值,具市場開發的潛力。由於山葵對環境氣候條件極為敏感,以往多種植於阿里山區,後因不當墾植,造成對國有林地水土保持之威脅,嘉義縣林區管理處公告於2016年全面回收山葵田,以致產業式微。本研究擬探討發展中、低海拔種植山葵的可行性,進而評估兼顧產業發展與環境永續的新產業型態。 本研究透過深度訪談諮詢產業界與學術界專業人士,發現山葵產業遭遇的問題,如缺乏健康種苗供應以及必須突破在中低海拔生產技術問題。然而根據田野調查方式與實驗田資料,評估於平地推廣設施栽培之可行性,另以成本-產量-利潤(Cost-Volume-Profit Analysis)分析,顯示山葵在冬季平地種植,進行多次採摘枝葉之栽培模式其收益高於牛番茄、菠菜與不結球白菜之收益。最後,以SWOT分析臺灣山葵產業的競爭優勢,提出山葵產業供應鏈發展策略之建議,包括建立種源庫、建立安全的標準栽培模式、推動品牌化等。
Wasabi (Eutrema japonicum (Miq.) Koidz.) have edible and medicinal value and possess market development potential. Wasabi are very sensitive to climate and environmental factors. In the past, wasabi were mostly cultivated at Alishan Township in Chiayi County. Later over-reclamation of forest land for wasabi cultivation threatened the soil and water conservation of national forest land, hence Chiayi Forest District Office of Taiwan Forestry Bureau proclaim the confiscation of national forest land in 2016, which leads to a drastic decline in wasabi cultivation industry in Taiwan. This study focus on exploring the potential of wasabi cultivation at low to mid-altitude climate and aim for evaluating the development of a new industrial structure balancing wasabi cultivation and environmental sustainability。 This study conduct in-depth interviews and consultations with professionals from the industrial and academic sectors, for investigating problems of wasabi cultivation industry, e.g. problems of limited supply of healthy wasabi plantlets and technical difficulties of cultivation under low to mid-altitude climate. Field investigation and experiments were also conducted for analyzing potential of promotion in facility cultivation on flat-land. Cost-Volume-Profit Analysis reveals that flat-land cultivation with multiple-harvest of wasabi leaves result in higher profit than cultivation of beef tomato, spinach and bok-choy. SWOT analysis the competitive advantage of wasabi cultivation industry to provide some suggestions on the supply chain management strategies, including establishment of wasabi-seed genetic resources center, establishment of standard cultivation practice to ensure pesticide rational usage and the safety of wasabi and brand creation and promotion.
