綠竹筍科學化創新生產管理模式之研究

摘要


台灣的綠竹筍產業,因沿襲傳統法生產技術模式,以致於產期與產量改變不大,產期在每年5至9月之間共約五個月,僅有正筍與翻筍二波採筍期,在產量上又因嵌紋病嚴重感染的影響,單位產量與品質無法有效提昇。由於利潤不高,致年輕人不願進入產業,又實際耕作者的高齡化等問題,使得綠竹筍產業發展相當困難,如能發展出一套全年皆能生產,產量高、品質穩定之創新生產管理模式,將對綠竹筍產業之提昇有所助益。 本研究目的在探討綠竹筍傳統法與科學化創新生產管理模式的差異,以及兩者的成本效益分析。在管理模式上之比較分析結果,採用綠竹筍科學化創新生產管理模式所獲得的產量高、品質穩定,總產量可以明顯增加;在成本效益分析上,資料來源採用文獻資料及對全省各地區以綠竹筍科學化創新生產管理模式的50位經營者之問卷調查數據,分析結果如下: 一、產量:傳統法生產管理模式每年每叢平均22.7公斤,科學化創新生產管理模式每年每叢平均可達75.8公斤。 二、產期:傳統法生產管理模式每年為五個月,科學化創新生產管理模式達全年度皆可生產。 三、生產波次:傳統法生產管理模式每年為2波,科學化創新生產管理模式每年可達6波以上。 四、科學化創新生產管理模式之收益增加大於成本增加,符合經濟效益。 綜合而言,科學化創新生產管理模式為現階段綠竹筍生產之高端技術,有助於提昇綠竹筍產業,作為產業發展的新模式。

Oldham bamboo shoots industry in Taiwan followed a traditional producing technology method so that the producing period and production have little changes. The maturation period of Oldham bamboo shoots lasts from May to September for approximately five months with only few harvested shoots and tilted shoots. During the Oldham bamboo shoots period, due to the serious infection of Bamboo mosaic virus, the quantity and quality per yield could not be effectively improved. Owing to low profits, young people are reluctant to enter this industry and the actual cultivators started aging. These are the problem to develop the Oldham bamboo shoots industry. If it is possible to develop a set of all year long production, there would be high output and stable quality. The production management model will help improve the Oldham bamboo shoots industry. The purpose of this study is to explore the differences between the traditional and the scientific and innovative production management model of Oldham bamboo shoots, and their cost-benefit analysis. In the comparative analysis of management models, adopting the scientific and innovative production management model of Oldham bamboo shoots has high production, stable quality, and a significant increase in total production; in cost-benefit analysis, sources of data use literature and questionnaire from 50 operators who have adopted scientific and innovative production management model for Oldham bamboo shoots across the province, and the analysis results are as follows: 1. Output: the average output of the traditional production management model makes is 22.7 kilograms per cluster per year while the scientific and innovative production management model can reach 75.8 kilograms per cluster per year. 2. Production period: the traditional production management model is five months each year while scientific and innovative production management models can be produced whole year. 3. Production wave: traditional production management model makes 2 waves per year while scientific and innovative production management model can reach up to 6 waves per year. 4. The scientific and innovative production management model creates a greater increasing revenue, which is cost-effectiveness. Overall, the scientific and innovative production management model is a high technology to develop Oldham bamboo shoots industry and create a new model in this industry.
