目前攪拌機上已有馬達的起停、轉速、轉向、時間等的控制,但有關攪拌麵糰時,判斷攪拌是否已完成仍要靠師傅經驗,因此本研究開發一智慧型控制器,除原有一般功能外,特別增加判斷攪拌是否完成及記憶配方之功能。 攪拌機在搓揉麵團時,由於麵粉內蛋白質與水的作用,麵筋的強度會逐漸增加,因此要判斷攪拌是否已到達擴展階段或完全階段,本研究將用馬達電功率的偵測信號當參考,經由特殊的雜訊處理技術及計算後,訂定控制法則做判斷,停止攪拌。 本研究之控制器,是採用一可程式邏輯控制器、觸控螢幕(人機介面)、電力感測器和攪拌機電路所組成;人機介面可記憶及設定配方、顯示目前馬達電力狀態,而配方的資訊也會與馬達功率信號結合,利用可程式邏輯控制器以達成智慧型的判斷,做機器停止及產生警示信號的依據。此系統經多次實驗及修正之後,已達到所要的功能。 本研究不僅可解決國內產品目前問題,更提供國內設備商一個新的產品模組,以提升產品價值。
Most of dough mixers have control functions of start, stop, speed changing, rotation changing and time management. However it needed professional’s experience to judge whether the dough is fully developed. Hence, this research is set to develop an intelligent controller. It not only includes the control functions but also add the capability of indicating the finishing of the dough. When a dough is mixing, the protein of flour have react with water. Then the flour gluten will become strong. Therefore, to know the state of gluten development, an electrical power sensor is used in this research. Special noise filter is then devised to treat the signal. After that some calculation is performed and control rules are established to judge the completion of dough. The intelligent controller consists of a peripheral circuit, a PLC, a touch-screen as human-machine interface and a power meter. Touch-screen can monitor state of motor, set and memorize recipes. The information of the recipes is combined with the electric power signal of the motor to generate an intelligent judgment, which then can stop the mixer. After a period of development and testing, the new controller has reached the functions as original expected. This research is not only solves problem with sensing gluten development, but also provide a new model to bakery equipment vendor.
