國內空廚廠房之防火安全評估

摘要


國內外大型的空廚廠房,通常結合有中央廚房、保稅倉儲、物流及一般工廠之作業場所等特性。雖然作業環境中潛在各種不安全的危害,但火警危患是最嚴重及具威脅性的,特別是在一些設計複雜的廠房及有明火作業或儲放大量易燃物質的倉庫,發生火警時就比其他機構更危險。 本文以國內空廚廠房為研究對象,進行防火安全能力評估,並由防火安全評估結果中選定特定區域進行火災情境模擬分析,將利用FDS火災模擬軟體進行火災情境模擬分析,以探討火場濃煙流動、溫度場及CO濃度之變化,並採用火災危險度評估方法以判定模擬情境下之火災風險度。模擬分析的結果可與防火安全評估結果相互比對驗證,以期能提供及改善該產業之防火安全能力。

The flight kitchen industry usually combines the characteristics of central kitchens, bonded stores, gross commodity transportation and factories, etc. Although there are various kinds of potential dangers existing in different working area of the flight kitchen complex, fire menace is often the most serious one. Selecting Flight Kitchen as research object in this report and evaluates its fire protection efficacy for further analysis of fire scenario to identify and evaluate fire risk parameters in more detail. The FDS software is utilized to simulate the fire model and probing into the variation of smoke transport and temperature response as well as the carbon monoxide concentration. Fire hazard has been analyzed in order to judge fire risk degree under the simulation situation. The result is verified with fire evaluation and expects to improve the fire protection of this industry.
