摘要


朝鮮薊(Artichoke, Cynara scolymus L.)是一種源自於地中海沿岸的植物,因 其高營養價值而聞名。成分分析研究顯示朝鮮薊含有大量的咖啡奎寧酸及黃酮 類化合物,具有抗氧化、保肝及抗癌等作用。在數年前,天健生物科技公司將 朝鮮薊引進台灣南投的山區種植,過去的文獻中證明烘乾的台灣朝鮮薊也具有 大量的酚類化合物且具有很強的抗氧化能力,因此本論文主要研究新鮮的朝鮮 薊在台灣南投氣候下不同時期採收的抗氧化成分及抗氧化能力差異。研究成果 顯示朝鮮薊的葉片與葉柄相比,具有較高的營養價值,而在氣候宜人的三月 (2019.04.04 採收),不僅氣候適合朝鮮薊的生長、產量達到高峰,其抗氧化活性 成分也較其他月份採收的朝鮮薊葉片來的高,且抗氧化能力也是最強的。

Artichoke (Cynara scolymus L.) which is famous for its highly valuable nutrients, is native to the Mediterranean coast. Previous analyses showed that artichoke is rich in the bioactive components including caffeoylquinic acids and flavonoids and was proved effective in anti-oxidation, liver protection and anti-cancer. Few years ago, Taiwan Tian-Jian Biotech introduced artichoke into Taiwan and one of the previous analyses showed that artichoke planted in Taiwan is also rich in the bioactive components. Therefore, we investigate the difference of the component content and the antioxidant capability of artichoke planted in different environments. The results show that the content of antioxidative component in artichoke leaf is higher than that in artichoke stem. Among the five batches of artichoke collected between January and June 2019, the artichoke leaf harvested on April 4 and grew in nice weather not only has the highest content of antioxidative component in the hot water extract but also has the highest antioxidant capacity.
