光譜儀快速分析應用於咖啡特性之研究

摘要


2014年收集台灣咖啡專賣店暢銷10種咖啡豆,先選擇咖啡的香、醇、酸、苦、甘特性相似的兩種咖啡豆,利用單一跟混合的方式,最後挑出C1、C2、C3三種咖啡豆;再搭配有健康概念,能保留咖啡豆裡含有「綠原酸」成分的M1、M2、M3三種的沖煮方法,組合成九種咖啡如下:C1M1、C2M1、C3M1、C1M2、C2M2、C3M2、C1M3、C2M3、C3M3。 第一部分:先逐一進行光譜儀的穿透率實驗,再依實驗數據統計分析討論,探討不同咖啡豆與不同沖煮方法,是否有顯著差異性。 第二部分:將三種咖啡豆與三種不同沖煮方法之九種咖啡組合,請參與研究者試飲後,填寫滿意度問卷調查表,再以分析軟體將問卷表之數據統計分析,製成滿意度調查統計表,探討不同咖啡豆與不同沖煮方法,其結果與光譜儀穿透率數據分析之相關性。 結果顯示: 壹、三種咖啡豆與三種不同沖煮方法之九種實驗組合中,得知不同的咖啡豆因為咖啡特性相似而穿透率與波長相當接近,例如:C1與C2。 貳、三種咖啡豆與三種不同沖煮方法之九種實驗組合中,得知不同的沖煮方法,其穿透率在-50﹪,波長在800nm時的沖煮方法,最受大眾歡迎,例如:M3。 參、滿意度問卷調查結果,最好喝咖啡為C3M3,最不好喝咖啡為C2M1,與前兩項結論具有相關性。

Part II : three coffee beans with three different methods of brewing coffee combination, try list of participants after drinking, fill out a satisfaction questionnaire, in accordance with statistical software statistical analysis of questionnaire data, make satisfaction survey tables, explore different beans and different brewing methods, the result of penetration and spectrometer data analysis. Conclusions, 1. three coffee beans and three kinds of experimental combinations of nine different brewing methods, learned that different coffee because the coffee is similar to and penetration very close, for example: C1 and C2. 2. three species of coffee beans and three experimental combinations of nine different brewing methods, learn different brewing methods, its penetration rate of-50 respectively, brewing method of wavelength in the 800nm, most popular, such as the M3. 3. the satisfaction survey results, the best coffee for C3M3, the bad coffee for C2M1, with the former two conclusions of relevance.
