摘要

本研究旨在討論頂級上海菜餐廳的過去、現在與未來，並以台北葉公館餐廳為例，說明一家具有特色的頂級中菜餐廳，如何透過餐廳的經營特色，為傳統中菜帶動未來發展方向，產生正面效益並回應企業社會責任。在當今西菜當紅的趨勢下，如何為傳統中菜找出新定位，為頂級中菜尋得長期發展方向，是本研究初衷，也是最終目標。

This study aims to discuss the past, present and future of top Chinese cuisine, and takes Taipei Chez Yeh Restaurant as an example to illustrate how a top Chinese restaurant with characteristics can drive the future development of traditional Chinese cuisine, generate positive benefits and respond to corporate social responsibility. Given the current trend of Western cuisine becoming popular, how to find a new position for traditional Chinese cuisine to pave a long-term development path for top Chinese cuisine is the original intention and ultimate goal of this study.
