摘要 本研究之目的主要在於了解國中學生的蔬菜水果攝取現況,並探討背景因素、蔬果營養知識、社會心理因素及環境因素對蔬果攝取行為的關係。以台北市北投國中學生為研究對象,採分層集束抽樣,於民國九十年一月進行問卷調查,共得有效樣本448人。所得資料以統計方法進行分析,重要結果歸納如下: 一、研究對象的營養知識狀況,位於中等程度。 二、在研究對象的社會心理因素中,研究對象所獲得的老師社會支持偏低,來自家人的社會支持明顯高於老師的社會支持。 三、一年級與二年級的蔬果攝取行為顯著優於三年級。 四、自覺健康狀況好的蔬果攝取行為顯著優於自覺健康普通與差的人。 五、研究對象的蔬菜和水果攝取行為均以維持期居多;研究對象家長的蔬菜和水果攝取行為均以準備期居多。 六、蔬果營養知識、家人社會支持、攝取蔬果自我效能、知覺攝取蔬果利益、家長蔬果攝取行為、家長飲食教養鼓勵性、家中蔬果供應情形與蔬果攝取行為有正相關;知覺攝取蔬果障礙與攝取蔬果攝取行為有負相關。 七、蔬果營養知識、家人社會支持、攝取蔬果自我效能、家長蔬果攝 取行為、知覺攝取蔬果障礙、家中蔬果供應情形共可解釋蔬果攝取行為總變異量61.6﹪。
A Study on the Influential Determinants of Vegetables & Fruit Eating Behaviors Among Students of a Selected Junior High School in Taipei city A Master Thesis YUH-FENG CHANG ABSTRACT The purpose of this study was to investigate the current vegetables & fruit- eating behaviors, and to examine the relationship between vegetables & fruit- eating behaviors and selected demographic characteristics, as well as knowledge, social psychology factors, and environment factors. The study consisted of 448 subjects who were selected by stratified clustered sampling method from Pei-Tou junior high school in Taipei city. The data were analyzed. The major findings of the study were as follows: 1. The knowledge of the subjects about nutrition was within medium level . 2. Within the social psychology factors, social support from family was higher than that from teachers. 3. The vegetables & fruit- eating behaviors of seven-grade and eight-grade subjects were significantly better than those of nine-grade subjects. 4. The vegetables & fruit- eating behaviors of feeling healthy subjects were significantly better than those of felling unhealthy subjects. 5. The vegetables & fruit- eating behaviors of most of subjects were in maintenance stage; the behaviors of subjects`s parents were in preparation stage. 6. The vegetables & fruit- eating behaviors were highly correlated with the nutrition knowledge, family support, perceived benefits, the encouragement of parents in eating, vegetables & fruit supplied at home, then negatively correlated with perceived barriers. 7. The variance of vegetables & fruit -eating behaviors could be explained by the independent variables which included the nutrition knowledge, family support , self –efficacy, parent’s behavior, perceived barriers and vegetables& fruit supplied at home, and the explanation power was 61.6﹪.
