綠茶高粱浸泡酒之抗氧化活性探討

摘要


本研究利用市售58%高梁酒浸泡綠茶葉,並經恆溫浸漬萃取及低溫處理後製備成綠茶浸泡酒,而且分別添加A組(0.02%半胱胺酸+0.03%葡萄糖酸鋅+0.03%維生素C)、B組(3%枸杞+1%甘草)與C組(A組+ B組)等物質,並進行其茶酒之抗氧化性活性探討。實驗結果顯示,綠茶浸泡酒之對DPPH自由基清除能力與還原力之效果呈正相關性。有添加B組物質茶酒之DPPH自由基清除自由基清除率為最佳,可達到72.2%,其次依序為添加A組物質(66.4%)、添加C組物質(65.2%)、無添加物質之對照組(64.8%)。在總酚含量方面,有添加B組物質茶酒之含量最高,相當於含有0.28mg GAE(gallic acid equivalent),其次含量依序為C組>A組>對照組。在還原力方面,仍以添加B組物質茶酒之還原力為最佳,相當於含有2.752mg AAE(ascorbic acid equivalent),其次含量依序為A組>C組>對照組。一般而言,茶酒之抗氧化活性能力約在第5個月即大幅衰退,但仍以添加B組物質之抗氧效果為最佳。

The antioxidative activities of the green tea leaves (GTls) soaked in commercial 58% (alcohol content) Kaoliang liquors (KLs) were investigated inthis study. The GTlKLs (GTls soaked in KLs)-making processes were under the condition that 10%(w/v) GTls was soaked into 58% KLs for extraction at constant temperature, then the cold treatment was set up. Three goup materials (A:0.02% Cysteine + 0.03% Zinc Gluconate + 0.03% Vitamin C; B: 3% Fructus lycii+ 1% Glycyrrhiza uralensis; C: A + B) were added into GTlKLs for enhancing their antioxidative activities. The results indicated that there is the positive relationship between the DPPHfree radical scavenging effects (DFRSE) and reducing powers (RP) for all GTlKLs.The GTlKLs with B group addition exhibited the highest DFRSE activity (the value = 72.2%), then the activity order of. thosewas at A group addition>C group addition>Control (without any material addition). In addition, the GTlKLs with B group addition also exhibited the highest value 0.28mg GAE (gallic acid equivalent)/mL of total phenol contents (TPC), then the TPC order of. thosewas at C group addition>A group addition>Control. The GTlKLs with B group additionalso exhibited the highest RP value 2.752mg AAE (ascorbic acid equivalent)/mL, then the RP order of those was at A group addition>C group addition>Control.In general, the antioxidative activities of all the GTlKLs began to decay a lot at the5th month. However, the addition of B group material into GTlKLs is still better than those additions of the other groups.
