高壓脈衝電場對秀珍菇生長及發育之影響

摘要


光電轉換技術能夠產生高伏特低電流之電能特性,且具有非熱性加工 及低耗能等優點,高壓脈衝電場的產生使得菇類在逆境的環境下受到刺 激,有助於子實體形成,增加菇類產量,並有效地利用木屑,減少木屑包 的損失,進而導致有更高品質的菇類產生和機能性化合物的提升,期望這 項技術可以使台灣農業科技有更進一步的突破。秀珍菇(Pleurotus sajorcaju)為台灣前五大重要菇類,具有好種植之特性,生長較為穩定,有豐 富蛋白質、多醣體及機能性成分,因此針對秀珍菇進行研究。實驗為研究 施以不同強度電場刺激(16 kV/m、22 kV/m、33 kV/m、66 kV/m)對於秀 珍菇菌絲走菌階段、子實體產量評估及抗氧化等機能性成分的影響,研究 結果顯示以33 kV/m條件下刺激可有效提升秀珍菇木屑包在走菌期間其 走菌速率及走菌完成率和木屑包在開包後可降低平均出菇日數、增加子 實體產量及提高生物效率對於木屑的利用率,以及使用固態方式接種於 Potato Dextrose Agar(PDA)培養基其走菌速率的提升,機能性方面以適 當的強度刺激可有效提升總酚、總類黃酮、粗多醣及麥角固醇含量,抗氧 化活性方面也有較佳的表現。綜合上述,電場刺激可提升秀珍菇產量及營 養價值,未來對於其他菇類的應用也可能具有相當高的潛力。

Photoelectric conversion technology are to generate electrical energy by high volts and low currents processing technology, advantage are non-thermal processing and low dissipation energy etc, the mushrooms by high voltage pulsed electric fields stimulation in adversity environment, conducive towards the stimulate hymenophore to formation, mushrooms yield increase, higher quality mushroom production and functional compounds increase. Now, sawdust prices are rising in Taiwan, in the long term, it will be the first priority to solve the declining of mushroom-technology advantages. Pleurotus sajorcaju is one of the top five important mushrooms in Taiwan, it's rich in protein, polysaccharides and functional components, with easy planting characteristics and easier to have preliminary results, to study was conducted on the Pleurotus sajor-caju. Experiment for research Pleurotus sajor-caju of mycelium spawn running, fruiting body yield evaluation and antioxidant properties that functional components effect under different electric field intensity stimulation (16 kV/m、22 kV/m、33 kV/m、66 kV/m), the results showed Pleurotus sajor-caju sawdust bottle in spawn running during can be speed, completion rate promotion and mean fruiting day reduce, fruiting body yield and biological efficiency increase after turn on sawdust bottle, spawn running speed promotion in solid inoculation to Potato Dextrose Agar (PDA) medium under 33 kV/m intensity stimulation, functionality with appropriate intensity stimulation can be total phenolic, total flavonoid, crude polysaccharide and ergosterol content increase, antioxidation activity also have better performance. To sum up the results, Pleurotus sajor-caju yield and nutritional value increase under electric field stimulation, applications of mushrooms might have considerable potential in the future.
