The chefs that work in the traditional Taiwanese outdoor catering business are very important foodservice Neimen district. In order to understand the evolution of outdoor catering business and chefs, as well as its cultural heritage and the continuation of its practice, we have gone through in-depths investigations such as interviews and observations to support our study. The interviewees that add up to 17 include different generation groups and local cultural workers. The results show us the aspect of inheritance from a chef is that one must overcome space restrictions, staff mobility, resource stability, price and profit, Environmental Health, that way it is beneficial for one’s business. In order to preserve and pass down our cultural values we can organize festivals and tourist attractions, schools can teach the young children, cooking contest. According to our results, it strongly recommends that in future, they can use resources and strength from their community. Together this can promote the Neimen district chefs and their culture and preserve their work.
